More Than 400 Reasons · 5 November 2012

While I have many reasons to stick with eating almost vegan, mainly I am happy to be able to eat as much as I want to eat. If I want to lose weight, I just eat more green stuff than I already do. The volume of food fills me up and I do not have a desire to cheat on my diet because I am not counting my calorie intake. I am not really dieting. I am just eating a different way than I used to eat.

From what I have read, I can get all the nutrients I need from a 1600 calorie vegan diet. That means that as long as I have balance in my meals, I have lots of “free” calories to get to a normal intake between 2000 and 2500 calories. I can basically eat as much as I want. Those 400 to 900 calories are plenty of reasons to keep eating almost vegan.
